I have a pretty good recipe for making plantain fritters. It's really good. Tastes like the real thing. Fritters are concoction of mashed fruit or vegetables or fish covered in a batter and deep fried. It's very popular in the English and French Caribbean. My raw version doesn't need a batter and it certainly doesn't need to be deep-fried. I use a dehydrator and it works just as well and keeps the enzymes in tact.
